WINTER GRILLING: Bringing a taste of summer to the table
Ingredients
- 4 eggs
- 1 cup sugar
- 1 or 2 ripe pears (about 1 heaping cup, diced)
- 1¼ cup all-purpose flour
- 2 tsps baking powder
- ⅛ tsp salt
- ½ cup (1 stick) unsalted butter, melted
- 1 tbl lime zest
- powdered sugar
Instructions
Grease a 9 or 10-inch springform pan with butter or cooking spray. Dust with flour and tap out the excess. Set aside.
Place the eggs and sugar in a mixing bowl. Beat with an electric mixer on medium speed for about 10 minutes, until the batter is pale yellow and ribbons when the beaters are lifted. (The mixture should increase in volume.)
Peel, stem and core the pears. Cut into ½ -inch dice. Measure 1 heaping cup of diced pear and set aside.
Combine the flour, baking powder and salt in a separate bowl. Mix half of the flour mixture into the egg and sugar mixture on low speed. Gradually mix in the melted butter. Add the remaining flour mixture, lime zest and diced pear and mix by hand using a large spoon or rubber spatula.
Pour the mixture into the prepared springform pan and bake in a 350 degree oven for 35 to 40 minutes, or until the top is golden brown and an inserted wooden skewer or toothpick comes out clean.
Cool the cake for about 5 minutes, then remove the pan ring. Just before serving, dust the cake with powdered sugar. Serves 8 to 12.
